HEALTHY SPINACH DIP

Ingrdients

  • 1 tsp olive oil
  • 1 small onion chopped
  • 1 1/2 tsps kosher salt
  • 2 minced garlic cloves
  • 1 cup non-fat greek yogurt
  • 1/2 cup non-fat cottage cheese
  • 10 ounces spinach
  • 1/2 cup chopped water chestnuts
  • 1 pinch black pepper
  • 1/2 tsp lemon juice
  • 1/2 cup mayonnaise

Directions:

  1. Heat oil in a large frying pan over medium heat and saute onion with salt, stirring frequently, until its nicely browned, about 15 minutes.
  2. Add garlic right at the end of onion cooking, and saute, stirring another minute before turning off the heat.
  3. Meanwhile, in a food processor whirl together yogurt, cottage cheese, and mayonnaise until smooth. Add the slightly cooled onion/garlic mixture and spinach, and whirl until nearly smooth.
  4. Scrape dip into a bowl, stir in water chestnuts, then season to taste with pepper, lemon juice and little more salt

THAI SPICED DEVILED EGGS

Ingredients

  • 6 Eggs
  • 2 Tablespoon mayonnaise
  • 2 Tablespoon Thai Curry paste
  • 1 Teaspoon ketchup
  • 1/2 teaspoon paprika for egg mixture plus garnish
  • 1/2 Teaspoon spice mustard
  • 1/2 Teaspoon Sriracha
  • Salt to taste
  • Spring/green onion for the pumpkin stem

Directions:

  1. Place eggs in a saucepan and add water to depth 1-1 1/2 above the eggs. Boil water, then cover & remove from heat for 10 minutes.
  2. Drain & then fill saucepan with cold water. Once cooled peel the eggs and slice each egg and remove the yolk.
  3. Place the yolks & all other ingredients in a small bowl and mush until very smooth. Mound the yolk mixture into the egg whites.

Lime & Cucumber Salsa

Ingredients

  • 4 limes squeezed
  • 3 cups seedless cucumber diced
  • 1/4 cup cilantro finely chopped
  • 4 tsps jalapeno chiles stemmed
  • 1 tsp salt
