- 3/4 cup almond flour
- 1/2 cup all purpose flour
- 1/4 cup butter, softened
- 1 egg
- 1/2 tsp almond extract
- 3/4 cup Splenda
- 1 tsp powdered sugar
Powdered Sugar Shortbread Cookies

Directions:
- Preheat oven to 350F. In a large mixing bowl, beat together the butter, egg and almond extract until creamy.
- Add both flours and gently stir until well blended. Then refrigerate dough for 30 minutes.
- Roll level tablespoon of the dough into round balls. Place them about 1.5 inches apart on the baking sheet. Bake 12-15 minutes. The tops will be slightly brown. Cool on the wire rack. Sift powdered sugar on the tops before serving.
Avocado Green Tea Popsicles
Ingredients
- 1 medium avocado, halved and pitted
- 1 medium banana, peeled, and coarsely chopped
- 1 cup fat-free milk
- 1/2 cup fat-free plain greek yogurt
- 1 tbs matcha green tea powder
- 1 tbs honey
Directions:
- Put all the ingredients in a food processor or blender. Process until the mixture is smooth.
- Carefully pour out the mixture into 6 4 ounce popsicle molds. Insert popsicle sticks. Freeze until firm, at least 8 hours.
- Just before serving remove from freezer.
- Run the popsicle mold uner warm water to loosen the popsicle and detach them from molds
