Powdered Sugar Shortbread Cookies


  • 3/4 cup almond flour
  • 1/2 cup all purpose flour
  • 1/4 cup butter, softened
  • 1 egg
  • 1/2 tsp almond extract
  • 3/4 cup Splenda
  • 1 tsp powdered sugar


  1. Preheat oven to 350F. In a large mixing bowl, beat together the butter, egg and almond extract until creamy.
  2. Add both flours and gently stir until well blended. Then refrigerate dough for 30 minutes.
  3. Roll level tablespoon of the dough into round balls. Place them about 1.5 inches apart on the baking sheet. Bake 12-15 minutes. The tops will be slightly brown. Cool on the wire rack. Sift powdered sugar on the tops before serving.

Avocado Green Tea Popsicles


  • 1 medium avocado, halved and pitted
  • 1 medium banana, peeled, and coarsely chopped
  • 1 cup fat-free milk
  • 1/2 cup fat-free plain greek yogurt
  • 1 tbs matcha green tea powder
  • 1 tbs honey


  1. Put all the ingredients in a food processor or blender. Process until the mixture is smooth.
  2. Carefully pour out the mixture into 6 4 ounce popsicle molds. Insert popsicle sticks. Freeze until firm, at least 8 hours.
  3. Just before serving remove from freezer.
  4. Run the popsicle mold uner warm water to loosen the popsicle and detach them from molds
