2.5 pounds watermelon
￼1/2 cup fresh cilantro coarsely chopped, loosely packed
2 medium jicama, cut into 3/4″ cubes
1/4 cup fresh lime juice
1/2 tsp salt
1/8 tsp cayenne
- In a large bowl, toss jicama with lime juice and salt; cover and refrigerate for 30 minutes. Meanwhile cut up
watermelon into 1/2″ cubes or equal to 4 cups.
- Once jicama has chilled, add watermelon, cilantro and cayenne to jicama in bowl; mix well. Cover and refrigerate 15 minutes to allow flavors to blend. Chill and serve. Garnish with fresh lime slices.
