1 pound pork tenderloin
1 1/4 Tbsp Teriyaki sauce
1 1/2 tsp cornstarch
1/4 tsp ground ginger
1/2 cup pineapple juice
2 ounces water
- Trim tenderloin of any extra fat. Slice into 1⁄2 inch thick slices; flatten with palm of hand (for even cooking).
- Lightly coat a large skillet with Non-Stick Cooking Spray; place over medium high heat until hot. Add pork, and
cook for 3 minutes on each side until browned. Remove pork and set aside.
- In a small bowl, combine teriyaki sauce, cornstarch, ginger, pineapple juice, and water and mix together and add to skillet. Add pork back to skillet. Allow sauce to come to boil, reduce heat and simmer for about 4 more minutes.
- Remove pork from skillet and plate. Spoon over extra sauce on pork if desired.
