1/2 cup fresh mint leaves, loosely packed
1/2 cup fresh parsley, loosely packed
1 Tbsp almonds, sliced
1 Tbsp Parmesan cheese, grated
1 garlic clove, minced
1 Tbsp lemon juice
2 Tbsp fat free low sodium chicken broth
2 tomatoes, sliced
1 cucumber, peeled and sliced
- In a food processor, combine mint, parsley, almonds, parmesan cheese, and garlic and blend until coarsely blended together. Add lemon juice and broth and blend together until smooth (like a paste).
- Prepare cucumber and tomatoes. Arrange tomato slices and cucumbers on each plate and top with pesto evenly amongst the 4 servings. Season with salt and pepper to taste.
