4 4 ounce boneless pork tenderloin
3/4 tsp salt
1/2 tsp black pepper freshly ground
1/2 cup fat free low sodium chicken broth
1 1/2 tsp dijon mustard
1/3 cup fat free half and half
- Trim any extra fat away from pork chop or tenderloin pieces. Pat dry with paper towels. Season with salt and pepper.
- Coat a large skillet with Non Stick Cooking Spray; place over medium high heat until hot. Add pork chops/ tenderloin to skillet and cook 3-4 min on each side until brown or internal temperature reaches 160 degrees. Remove from skillet and keep warm.
- In same skillet, add chicken broth, mustard, and fat free half and half and simmer (low to medium heat) until sauce is slightly thickened.
- Plate pork chops. Spoon sauce evenly over the 4 servings.
