4 4 ounces boneless skinless chicken breasts
2 tsp lime juice
1 tsp extra-virgin olive oil
2 tsp jerk seasoning
- Place chicken between 2 sheets of heavy plastic wrap or gallon size plastic bag (and seal). Flatten chicken to 1⁄4 inch thickness using a meat mallet or rolling pin.
- Combine lime juice and olive oil; brush on both sides of chicken, to rub the jerk seasoning on the chicken. Coat the grill pan with cooking spray; heat skillet over medium-high heat. Cook chicken for 5-6 minutes each side until juices run clear.
- Remove from heat and serve.
