4 3-ounces boneless center-cut lean pork chops (about 4 ounces each)
1 tsp seasoning, Mrs. dash
Juice half of one lemon
1/2 cup balsamic vinegar
1/3 cup fat free low sodium chicken broth
- Trim excess fat off of pork chops. Pat dry with paper towels. Season both sides evenly, then squeeze lemon juice to coat chops.
- In a medium skillet, spray with Non Stick Cooking Spray; place over medium heat until hot. Add pork chops and cook 3-4 minutes each side, until lightly browned and internal temperature is 160 degrees. Remove, set aside, wrap in foil to keep warm until time to serve.
- In a second skillet, combine vinegar and broth in skillet. Cook over medium-high heat until sauce is reduced by half (about 5 minutes), stirring occasionally. Spoon sauce evenly over 4 chops and serve.
